Green salad with cherry tomatoes and shredded pistachios


A little bit of a summer experiment. Green salad with cherry tomatoes and shredded pistachios. When I first made the salad I really liked this nuts note in it. So I was brave and creativeūüėĚ and added some sunflowers seeds and almonds. And guess what? Love it


Serves: 2 | Prep time 10 mins | Total time 10 mins

  • 2 cupc baby spinach

  • 2 cups rocket salad

  • 200g cherry tomato

  • 2 ¬†steamed chicken breasts

  • ¬†1 avocado

  • 1¬†carrot

  • 50g¬†shredded pistachios

  • 50g¬†almonds

  • 50g sunflower seeds

  • 1 tbs balsamic dressing (3/4 olive oil+1/4 balsamic vinegar+a bit of honey)


Steam chicken breast for 20 minutes. I usually have it premade for a couples of days worth, stored in the fridge. Chop all the ingredients, place into a large bowl. Gently toss. Serve. Enjoy!
